Asian Cole Slaw


We like to serve this at our American-style picnic parties for local friends. There are always mixed reactions to raw vegetables, but this cole slaw is usually a success!


3 Tablespoons rice vinegar

3 Tablespoons vegetable oil

2 ½ Tablespoons peanut butter

1 ½ Tablespoons soy sauce

1 ½ Tablespoons brown sugar

1 Tablespoon minced ginger

2 ¼ teaspoons minced garlic

2 ½ cups green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 cup napa cabbage, thinly sliced

1 carrot, julienned

1 red bell pepper, thinly sliced

3 green onions, chopped

¼ cup chopped cilantro

Directions and Notes:

1. In a medium bowl, combine the vinegar, oil, peanut butter, soy sauce, brown sugar, ginger and garlic.

2. In a large bowl, combine the cabbages, peppers, carrots, green onions, and cilantro.

3. Pour the peanut butter mixture over top and mix together just before serving.
