Breakfast Tacos

Breakfast tacos are quick, easy, and versatile so everyone ends up with something they like on their plate. We eat these often before work in the mornings. They also make a good breakfast for dinner option with lots of veggies & protein. We usually just put the ingredients out in bowls and let guests and friends add whatever looks good to them.

Ingredients:

eggs, scrambled (roughly 1-2 eggs per taco depending on preference and tortilla size)

red bell peppers, diced and lightly stir-fried with oil and salt

green bell peppers, diced and lightly stir-fried with oil and salt

mushrooms, halved and lightly stir-fried with oil and salt

cheddar cheese, shredded or crumbled

flour or corn tortillas

Directions and Notes:

Set all ingredients out in bowls. Assemble tacos. Microwave to melt the cheese if desired. Enjoy!
