Classic No-Bake Cookies (a.k.a. “Beaver Houses,” “Goose Poops,” etc.)



2/3 cup white sugar

1/4 cup + 1 Tablespoon milk

3 Tablespoons cocoa powder

1/4 cup peanut butter

1 1/2 cups quick-cooking oats

1 teaspoon vanilla

Directions and Notes:

1. Measure the oats, peanut butter, and vanilla and combine in a medium bowl.

2. Measure the sugar, milk, and cocoa powder and combine in a small saucepan. Place the saucepan over medium heat and stir the mixture constantly until it begins to boil. This should happen quickly; you don’t want it to cook too long and dry out or harden. Allow it to boil for about a minute– not longer– while continuing to stir constantly.

3. Remove from heat and immediately stir in the oat mixture until well-combined.

4. Scoop spoonfuls of the mixture onto a plate that is covered with wax paper (optional but convenient). Allow to harden in the refrigerator before eating.

Note: These no-bakes are moist and chewy, more toward the soft end of the spectrum of no-bake cookies rather than the harder and more brittle end. The texture and consistency, however, really depend on the cook time– too short and they won’t firm up; too long and they’ll be dry and crumbly. You may need to adjust the times above depending on your heating element.
