Classic Deviled Eggs

Standard

Ingredients:

12 large eggs, hard-boiled and cooled

½ cup mayonnaise (China friends, I just use the jars of stuff called “Salad Dressing” that they sell in most supermarkets… not the best quality or the healthiest, but it works for this recipe.)

2 teaspoons yellow mustard

4 dashes black pepper

sprinkle of paprika

Directions and Notes:

1. Cut the eggs lengthwise into halves.

2. Slip out the yolks and mash well with a fork.

3. Mix in the remaining ingredients except for the paprika.

4 Fill whites with yolk mixture, heaping it up lightly or creating a squeeze tube from a plastic bag with a cut tip, much like squeezing icing onto a cake to decorate it.

5. Sprinkle with paprika and refrigerate until serving.

A few ways to mix this up: Try adding a splash of Worcestershire sauce or 1-2 teaspoons of vinegar. These have been a big hit with our students on a couple of different occasions.
