Basic Chocolate Cake



1 cup white sugar

1 3/4 cups all purpose flour

3/4 cup cocoa powder

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla

1 cup boiling water

Directions and Notes:

1. Hand-beat these ingredients for 2-3 minutes as fast as possible, then add 1 cup boiling water. The batter will be extremely thin.

. Pour the batter into two 9-inch cake pans and bake for 30-35 minutes at 175 degrees Celsius.

[For cupcakes this makes about 18 cupcake tins (filled about ¾ full of batter)].

Note: The sugar and oil in the recipe above have been significantly reduced from the original recipe to make this a healthier and less rich– but still amazing– option for both American and local friends.
