1 pound of pork, sliced very thin into small pieces
1 medium tomato, diced
1 Tablespoon soy sauce
¼ cup sugar
3 Tablespoons ketchup
¼ teaspoon salt
¼ cup + 2 Tablespoons water
¼ cup + 2 Tablespoons white vinegar
1/3 cup cornstarch
oil for deep frying
Directions and Notes:
1. Marinade the meat in a mixture of the soy sauce, salt, and cornstarch for 20 minutes.
2. Meanwhile, in a small bowl, combine the ketchup, sugar, water, and vinegar to make the sauce.
3. During the last few minutes that the meat is marinating, heat the oil for deep frying. When the oil is very hot, dip each piece of meat, one by one, into the pot of oil. If the oil is sufficiently hot, the meat should cook and brown within just a few seconds. I just used a pair of tongs to dip the meat in and pull it out again somewhat quickly. Place the fried meat into a bowl to drain a bit.
4. When all the meat has been deep fried, heat the sauce and tomatoes in a medium frying pan or wok over medium heat. Bring it to a boil, then reduce it to a simmer. Taste and make any desired adjustments. Stir in the meat and serve.
