1 small zucchini or mushrooms, cleaned and with stems totally removed
shredded mozzarella cheese
Other Toppings: Italian seasoning, Parmesan cheese, pepperoni slices, etc.
Directions and Notes:
1. For zucchini: Slice the zucchini into quarter to half inch slices and arrange in a single layer on a cookie sheet or baking pan. For mushrooms: Place the whole mushrooms top (no stems) upside down on a baking sheet. Top with sauce, then cheese and any other toppings desired.
2. Bake for 15-20 minutes at 400 degrees until the vegetables are cooked and the cheese is golden brown.
