Mapo Tofu



2 Tablespoons vegetable oil

1 Tablespoon chili oil

3 Tablespoons chili bean paste

4 cloves of garlic, chopped

1 teaspoon dried chili flakes (optional)

½ jin ground pork

1 Tablespoon soy sauce

½ cup water

1- 1 ½ blocks of tofu, cubed

1 Tablespoon ground Sichuan pepper (or whole Sichuan peppercorns)

Directions and Notes:

1. Heat the vegetable oil and chili oil over high heat.

2. Add the chili bean paste, garlic, dried chili flakes, and ground pork, and stir-fry until the meat is cooked. (This gets spicy, so turn the kitchen fan on.)

3. Add the soy sauce, water, and tofu and allow to simmer a few minutes as the tofu steams. Then stir the tofu into the sauce carefully so the tofu does not break too much.

4. Add the Sichuan pepper and stir-fry for 2 minutes.
