Broccoli Cumin Soup



2 teaspoons oil

2 stalks celery

4 cloves garlic

1 medium onion

4 small heads of broccoli, including stalks, chopped

2 medium potatoes, cubed

2 cups water

3 cups chicken broth

1 teaspoon cumin

½ teaspoon salt (or to taste)

¼ teaspoon ground red pepper

Directions and Notes:

1. Heat the oil in a large pot. Chop the celery, garlic, and onion into medium pieces and add to the hot oil. Cook on low heat for 3-4 minutes until fragrant. Add more oil or a little water if needed.

2. Add the remaining ingredients and allow to boil for about 25 minutes until potatoes are tender.

3. Pour into a blender and blend until desired texture is reached. I blended mine completely but think it would have also been great if I’d left some chunks of broccoli unblended.

Serve with whole wheat bread.
