1 teaspoon oil
2 cups mushrooms, sliced
shredded or sliced mozzarella cheese
sliced bread, such as the bread made in this post
salt to taste
Directions and Notes:
1. Place the cheese for each sandwich on one slice of bread, and put both slices in the toaster oven or oven.
2. Meanwhile, heat the oil over medium heat. Add the mushroom slices and cook until soft and fragrant.
3. Assemble the sandwiches and enjoy! These were really good alongside this roasted red pepper and sweet potato soup.
