Chocolate Zucchini Cake



½ cup oil

¾ cup brown sugar

¼ cup white sugar

3 eggs

1 teaspoon vanilla

2 cups grated zucchini

1 ½ cups all-purpose flour

1 cup buckwheat flour (or more all-purpose flour)

2 teaspoons baking soda

½ teaspoon salt

½ teaspoon cinnamon

4 Tablespoons cocoa powder

½ cup buttermilk (or regular milk)

½ cup chocolate chips (or up to 1 cup as desired)

Directions and Notes:

1. Preheat the oven to 325 degrees.

2. In a medium bowl, beat together the oil, brown sugar, eggs, and vanilla until just combined.

3. Stir in the zucchini.

4. Add rest of ingredients except chocolate chips.  Pour into 9×13 pan.

5. Sprinkle chocolate chips on top of batter before baking.

6. Bake at 325 for 45 minutes.

This is adapted from my mom’s Chocolate Zucchini Recipe, which is even better but not as China-friendly.
