Caramelized Onion and Lamb Sandwiches



1 Tablespoon oil

1 pound of sliced lamb (I make this in the winter here when they sell packs of lamb for hot pot, like this one):

1 onion, cut into thin slices

salt to taste

sliced bread, such as the bread made in this post

sauce, dressing, or hummus (optional)

Directions and Notes:

1. In a medium frying pan, heat 1 teaspoon of the oil over medium heat. Cook the lamb, sprinkling with salt, and remove from the frying pan.

2. Heat the rest of the oil in the frying pan and add the sliced onions. Salt and cook until caramelized.

3. Assemble sandwiches with lamb, onions, and sauce, dressing, or hummus as desired. These sandwiches are great with White Bean Hummus (Original Flavor) or Roasted Red Pepper White Bean Hummus. Alternatively, we sometimes use an American Southwest flavor dressing that we can find in local supermarkets, and it’s amazing together.

This meal is so simple and has quickly become one of our favorites when sliced lamb is available.IMG_3640Serving Estimate: Makes 2 sandwiches.
