Shepherd’s Pie



1 pound ground beef or pork

¾ teaspoon salt

½ medium onion, diced

1 ½ cups corn kernels

2-3 cups mashed potatoes, such as the Rosemary Olive Mashed Potatoes from this post

sprinkle of paprika

Directions and Notes:

1. In a medium frying pan, combine the ground meat, salt, and onion. Cook until meat is browned and onion is partially cooked. Drain and pour into a 10” round pan (or other pan of choice.)

2. In a small saucepan, boil the corn kernels until tender. Pour on top of the meat in the baking pan.

3. Add mashed potatoes, as thick a layer as you like and pat down so the potatoes are smooth on top and cover the corn and meat.

4. Sprinkle with paprika and bake at 350 degrees for 20-25 minutes until warmed through.

We ate this after class one day with a student who followed us home. The three of us had fun making up our own elaborate tales of how it came to be called “Shepherd’s Pie.”
