1 Tablespoon oil
½ red onion, sliced
2 medium tomatoes, diced
½ large red pepper, sliced into long, thin pieces
2 slightly spicy green peppers, sliced into long, thin pieces
2 cloves garlic, minced
½ teaspoon salt
1 pound sausage, cooked and drained, like the sausage from this post
1 Tablespoon Italian seasoning
Directions and Notes:
1. In a large frying pan, heat the oil over medium heat.
2. Add the garlic, onion, and peppers and cook 2 minutes until beginning to become tender. Add the remaining ingredients and stir fry until cooked.
Serve as is or on bread as a sandwich.
