Roasted Red Pepper and Sweet Potato Soup (Crock Pot)


Picture 44Ingredients:

6 red bell peppers

4 medium sweet potatoes

1 cup coconut milk/ coconut drink as available. I used this one:


2 cloves garlic

2 cups chicken broth (or 2 cups hot water + 2 1/2 teaspoons chicken granules)


1/2 teaspoon black pepper

1/2- 1 teaspoon red pepper flakes (according to taste)

1 teaspoon salt

1 cup water

1/3- 1/2 red onion, sliced


Directions and Notes:

1. Preheat the oven to 400 degrees. Slice the red peppers in half lengthwise. Roast for 15- 20 minutes until fragrant.


2. Combine all ingredients in the crock pot. Cook on low for 2-3 hours.

3. Blend on low in a blender to desired smoothness.
