1 pound ground Italian sausage, such as homemade sausage from this post
2 garlic cloves
3 cups beef broth
1 1/2 cups cherry tomatoes, washed and halved (or other diced tomatoes)
1 medium carrot, sliced
1 medium zucchini, cubed
2 cups dark greens (spinach, etc.)
1 1/2 cups water
1/4 teaspoon pepper
1/2 teaspoon salt
Directions & Notes:
1. Brown the garlic and sausage in a medium frying pan.
2. Combine all ingredients including the cooked garlic and sausage in a crock pot. Cook over low heat for 2-3 hours until soup is warm and flavors have melded.
The soup becomes more brothy as it cooks.
Serving Estimate: 4-6 bowls of soup
