Homemade Tomato Sauce



2 Tablespoons oil

6 large cloves garlic, minced

6- 6 1/2 cups tomatoes, large diced

1/2 cup liquid (water, vegetable broth, etc.)

2 Tablespoons Italian seasoning

1 Tablespoon basil

1 Tablespoon sugar

1 1/2 teaspoons salt

1/2 teaspoon red pepper flakes (optional)

1 1/2 teaspoons oregano

Directions & Notes:

1. In a large pot, heat the oil and cook the minced garlic.

2. Add all the other ingredients and cook slowly over medium heat until the tomatoes are soft and broken down and sauce thickens to desired consistency, about 30 minutes. Stir every few minutes, using a ladle to assist in crushing softened tomato pieces.

This tomato sauce is thick and great for pizzas, pastas, and as a dipping sauce. It can definitely be blended if a less chunky sauce is desired.

Add 1/2 pound to 1 pound of ground meat for a meaty sauce.

Serving Estimate: Makes about 4 cups of sauce after it reduces from simmering
