Fresh Pineapple Salsa


Picture 27Ingredients:

2 small tomatoes, finely diced

4 Tablespoons finely chopped green onion

1 6-inch piece of cucumber, finely diced

1/2 cup chopped cilantro leaves

1 mildly hot green pepper, finely diced, seeded if desired

2/3 medium pineapple, finely diced

1/2 Tablespoon lime juice

1/4 teaspoon salt

2 Tablespoons brown sugar (optional depending on desired sweetness)

Directions and Notes:

Combine all of the finely chopped and diced ingredients in a medium bowl. Stir well. Refrigerate at least one hour before serving. Serve with sweet crackers or cinnamon sugar dumpling wrapper chips.
