2 cups flour
1/2 teaspoon salt
2 teaspoons baking soda
1/2 teaspoon cinnamon
5 medium bananas (preferably very ripe)
1/2 cup milk
1/4 cup oil
1/2 cup golden brown sugar (or 3/4 cup for a sweeter recipe)
Directions & Notes:
1. Preheat oven to 325 degrees and oil a bundt pan.
2. In a large bowl, mix the dry ingredients. Because our brown sugar clumps so easily when it contacts other liquids, I mix it in with the dry ingredients too.
3. Mix the milk, oil, and bananas in a blender (or by hand). Once combined, add the eggs for a very short pulse until just mixed. Pour the wet mixture into the bowl with the dry ingredients and stir until just combined.
4. Pour into bundt pan and bake for 45-50 minutes. Cool 10-20 minutes and then turn out onto a plate for serving.
