Apple Cheddar Omelet for Two



4- 5 large eggs

1/8- 1/4 teaspoon salt (according to preference and the saltiness of the cheddar)

sprinkle of black pepper

1/4 cup milk (optional; I’ve also made this without it.)

1/3 cup diced apple pieces

1/8 teaspoon cinnamon

1 Tablespoon chopped green onions

3 Tablespoons crumbled cheddar cheese

oil for frying pan

Directions & Notes:

1. Mix the first six ingredients together in a bowl.

78060762. Heat 1-2 teaspoons of oil on a medium frying pan over medium-low heat. Using enough oil at this point makes the omelet a lot easier to lift from the bottom of the pan and fold in half later.

3. Pour the mixture into the frying pan, sprinkle the green onion over half of the omelet, and allow it to cook on low heat, covered, for 10- 12 minutes, or until the egg is cooked through.

4. Sprinkle the cheese over half of the omelet and gently lift the other half to fold over the cheese. Allow to cook one or two more minutes until cheese is melted.

Serving Estimate: Serves 2.
